Tortellini Zuppa Toscana Soup
Ingredients:
- 1 lb of Italian sausage (or any sausage)
- ½ diced yellow onion
- 3 minced cloves of garlic
- 1 lb of diced up Yukon potatoes
- 5-6 cups of chicken broth
- 1.5 cup of heavy cream
- 1 package of tortellini
- 2 cups of spinach
- 1 TBSP of Italian seasoning
- Salt and pepper to taste
Directions:
- Brown your sausage- once browned, set aside.
- Then put a TBSP of olive oil in the pan and sauté your onion and garlic
- Add back in your sausage with the onion and garlic, then add your potatoes, chicken broth, heavy cream, and tortellini.
- Bring that to a simmer until the tortellini is cooked through, then add the spinach and Italian seasoning.
- Add salt and pepper to taste and serve with some parmesan and bread on the side.
