Tortellini Zuppa Toscana Soup

Tortellini Zuppa Toscana Soup

Ingredients:

  • 1 lb of Italian sausage (or any sausage) 
  • ½ diced yellow onion 
  • 3 minced cloves of garlic
  • 1 lb of diced up Yukon potatoes 
  • 5-6 cups of chicken broth
  • 1.5 cup of heavy cream
  • 1 package of tortellini 
  • 2 cups of spinach 
  • 1 TBSP of Italian seasoning
  • Salt and pepper to taste 

Directions: 

  • Brown your sausage- once browned, set aside.
  • Then put a TBSP of olive oil in the pan and sauté your onion and garlic
  • Add back in your sausage with the onion and garlic, then add your potatoes, chicken broth, heavy cream, and tortellini.
  • Bring that to a simmer until the tortellini is cooked through, then add the spinach and Italian seasoning.
  • Add salt and pepper to taste and serve with some parmesan and bread on the side.
